My Cupcakes! The secret to making really light, fluffy, moist cupcakes is beating the butter by itself before adding the sugar! Method: Beat 115g butter in a bowl with an electric whisk then when it's pale yellow in color, add 115g caster sugar and beat again. Sieve in 115g self- raising flour and 1tsp baking powder then mix again. Beat 2 eggs seperately in a cup and then whisk in with 1- 2tsp vanilla essence. The mixture is ready when it falls easily off a spoon. Heat the oven to 180'C and line a muffin tin with paper cases. Put 1-2 dessert spoonfuls of batter into each case then put into the oven for 15-20 mins until golden brown. Allow to cool then decorate how you like. I love to beat 50g butter in a bowl then sieve in 100g icing sugar and add flavoring and/ or coloring to the icing for a delicious butter icing!
