Lemon Posset! Really refreshing and light Ingredients: 100ml double cream 50g castor sugar Juice and rind 1 lemon Gelatine (Optional) Method: 1) Whip the cream so it forms soft peaks. 2) Gradually beat in the sugar. 3) Zest and juice the lemon and stir into the cream and sugar. 4) Dissolve the Gelatine and stir into the mixture. (optional step!) 5) Spoon into individual glasses and refrigerate until set (around 4 hours) 6) Serve with a sprig of mint!
